This is a great easy bread....Beautiful for Christmas but can use at any time..
Pistachio/Cranberry Bread
1 box white cake mix
2 boxes instant pistachio pudding mix (small boxes)( as is)
1 cup club soda
1/2 cup oil
4 eggs
1 1/2 cup cooked cranberries
1 cup chopped walnuts
Mix all of the ingredients together except for the cranberries and walnuts. Blend with a mixer on high speed until smooth. Stir in cranberries and walnuts. Put into two 8 1/4 x 4 1/4 x 2 1/2 pans(small ones) and bake at 350 degrees for one hour or until toothpick comes out clean.
Makes 2 loaves
