John and Elena, the best molletes are (were?) at the museum of anthropology! Ooooooh, they were the best. My mouth waters at the thought of them.

Andrew. They were quite simple. A bolillo sliced in half, spread with refried beans and sprinkled liberally with manchego cheese and broiled till the cheese browned to a heavenly golden hue. Slice of bacon optional. At Vips they always had salsa roja in which to drown them. I am going insane just thinking od them, especially in light that the weather is a breath away from dropping snow on us. Makes the pintas spent at Vips seem more like the Bronze Age.

Molletes. Oh man that is killing me. My wife had to go on a fat free diet for high blood pressure, so I have been eating the same stuff as her. No cheese allowed. Pure torture, but my gut is just about gone.

What food do you miss the most from Mexico? Mine is chiles rellenos con arroz mexicano y frijoles aguados. Throw in a handfull of tortillas fresh from the tortilleria and a good helping of crema de irapuato and I could just break down and sob. I am still sobbing......have not stopped.
